Sesame Tahini Cookies

I stumbled across tahini cookies after reading up on the amazing health benefits of sesame seeds. They are good for your heart, full of healthy fats, and create a spread with more subtle and savory flavor than most nut butters. These cookies are like the grown up version of a peanut butter cookie. I love them paired with a cup of tea. They are also naturally gluten free, vegan, and sweetened only with real maple syrup and coconut sugar.

1/2 cup tahini

1/4 cup maple syrup

2 tbs coconut sugar

3 tbs oat flour

1/2 cup millet flour

1/4 tsp baking powder

1/4 cup sesame seeds (for rolling)

Combine your wet ingredients and coconut sugar in a bowl until a smooth paste forms. Mix in oat flour, millet flour, and baking powder until well combined. Roll dough into 1 inch balls (if your dough feels too soft, you can pop it in the fridge for 10 minutes to make rolling easier.) Once formed, coat the balls in a small bowl of sesame seeds, transfer to a prepped baking sheet, flatten lightly with a spatula, and bake at 350 fror 12-15 minutes or until edges are crisp.
